[Global] Seaweed is unlikely to be the first ingredient that comes to mind when someone says salad, but it has been an important part of the Chinese diet for hundreds of years.
Regarded as a vegetable in the culinary world, seaweed is a very good source of minerals, especially iodine which helps the development of healthy hair and skin, as well as aiding the thyroid gland.
In fact, the recommended daily allowance of iodine (150 mcg/day) can be fulfilled by eating a few grams of seaweed.
Dried edible seaweed is available in most Asian stores and is delicious if prepared correctly, such as in a seaweed salad.
Seaweed salad is best prepared with a type of green seaweed the Chinese call hai dai or sea string. Before using, remember to soak the seaweed in warm water until they are soft and smooth.

Chinese Seaweed Salad
- 50 g dried seaweed
- 3 tbsp rice wine vinegar
- 3 cloves of garlic, crushed
- 1 tsp sugar
- 2 tbsp light soy sauce
- Sesame oil
- Chilli flakes (to taste)
- White pepper flakes (to taste)
- Roasted sesame seeds (optional)
- Soak the seaweed in warm water and drain when ready. Set aside.
- Mix all other ingredients in a small bowl. Check for seasoning.
- Add dressing to seaweed. Mix and serve.
