Many seaweeds contain phycocolloids or polysaccharide hydrocolloids that can be extracted for various purposes. The three major phycocolloids are alginates, agars, and carrageenans. Alginates are extracted primarily from brown seaweeds, and agar and carrageenan are extracted from red seaweeds.
